পাঁচফোড়ন হলো একত্রিত পাঁচটি মসলা যা বাংলাদেশে বিভিন্ন রান্নায় ব্যবহার করা হয়। মসলা পাঁচটি হলো মৌরি, মেথি, জিরা, কালিজিরা ও সরিষা। কোথাও আবার সরিষার পরিবর্তে ধনিয়া ব্যবহার করা হয়।

পাঁচফোড়নে পুষ্টি ও ওষুধি—দুটি গুণই আছে। এতে রয়েছে খনিজ লবণ। অর্থাৎ পটাশিয়াম, সোডিয়াম, ক্যালসিয়াম, ফসফরাস, ম্যাগনেশিয়াম, জিংক, আয়রন, ম্যাঙ্গানিজ,  সেলেনিয়াম ও কপার। আরো আছে ভিটামিন ‘এ’, ‘বি-১’, ‘বি-২’, ‘বি-৩’, ‘বি-৬’, ‘বি-৯’, ‘সি’, ‘ই’ ও ‘কে’।

Panchforan is a combination of five spices that are used in different cuisines in Bangladesh. The five spices are anise, fenugreek, cumin, kalizira and mustard. Somewhere again coriander is used instead of mustard.

Panchforan has both nutritional and medicinal properties. It contains mineral salts. That is, potassium, sodium, calcium, phosphorus, magnesium, zinc, iron, manganese, selenium and copper. There are also vitamins ‘A’, ‘B-1’, ‘B-2’, ‘B-3’, ‘B-6’, ‘B-9’, ‘C’, ‘E’ and ‘K’.
